We both love it! just pepper and some salt rubbed on it, laid on a bed of onions. Stick in oven and get to smell it cooking for hours. Baked potatoes, some veggies............yum!

lol our broadband hot spot goes crazy now and then, pauses and does its own thing. Most of the time works at 4g speeds.

yummmmmmmmmmmm so good! nice and medium rare. Cooked a 8 lb one so we have a good amount of leftovers.

Wifey's Cajun Meatball Stew was so flavorfully rich you could have it for desert. Seriously, this down to earth stew is a crowd pleaser. I'm providing a recipe similar to Cathy's no-recipe version. The main ingredient is "Love". :)

Snowing just as forecasted. While the snow is sticking to lawns, roofs and such, it is not on the water drenched streets. We generally get far more ice than snow. I took a picture of our pond since the snow on the big stones is quite pretty. Will post later. Time for a nap.

CAJUN MEATBALL STEW

Ingredients:

MEATBALLS
1 lb Ground round or chuck
1 1/2 c Soft bread crumbs (3 slices)
2 tb Each minced parsley
Cold water
1/2 Clove garlic; crushed
1 Egg
1/4 ts Each cayenne pepper
1/4 c Vegetable oil
4 Green onions; trimmed and
Minced (save tops for gravy)
2 ts Salt

GRAVY
Roux
Seasoning

Note: This stew is best when made in a Iron Dutch Oven (cast iron pot with cover)

You can always substitute a good Cajun multi-seasoning for the recipe seasonings. Just as flavorful without the heat. The secret to authentic, flavorful Cajun food is the flavor not the searing pepper. We either make our own seasoning or buy a multi-seasoning such as Tony Chachere's Cajun Seasonings or similar brand generally available at major grocers and on-line.

The best advice is to season to taste. You can always add more but you can't take it out! :)

Hot Sounds good to me! I just love hot peppers. I must be a real pepper person, never met a pepper I did not like, some of my favorites are jalapeno pepper, extra flavorful orange habanero, and ultra hot birds eye pepper. I grow only hot peppers in my garden. Some birds just love hot peppers too, like cocktails and cockatoos. They eat the dried hot peppers straight like theirs nothing hot about them at all!

All you guy's food sounds so good and I ran out of likes liking them all. We just had a bunch of snacking stuff, shrimp, smoked salmon, BBQ'd beef, oysters, veggie plate, pumpkin cheesecake, pumpkin spice bread, cookies, chips etc. All stuffed now from eating all day long. Was gonna make a ham for dinner tonight after they all went home but too tired and too full so will eat it tomorrow

That "snacking stuff" sounded great! Yum yum yum. :)

Cathy just left for work on our iced over streets. Thankfully she doesn't have far to drive. I would much rather have her drive in snow than on black ice. It'll be all good.

Here is a funny to start your day. My sister-in-law Sue in SW Louisiana always has a big Christmas Eve family gathering. Now that her grandchildren are teenagers, mainly girls. When time came for the party to begin Sue had the youngest grandchild go around the room with a basket collecting all teen's cell phones. Of course the two oldest granddaughters protested that it wasn't fair to which Sue replied "This is Christmas, it's my house so get over it!". Bet you could hear a pin drop right about then. We're sure everyone had a wonderful time. :)

The good and bad of cell phones .All they do is text and not enjoy life and really glad I did not have them as a kid as there are to many great memories I would have missed out on and would not have great things to talk about .Texting is not a memory . :razz:
