The best water quality is one with out a lot of nutrients in the water, one that is stable and doesn't fluctuate all over the place quickly. QUICKLY BEING KEY. Fish can and do have to tolerate high and low pH hard and soft water. So long as it's stable their immune system can deal with highs or lows

I agree a steady pH is what we want, but I just want to comment that having a high pH in warm weather could cause problems if there is any ammonia in the water. For example, see the chart below. With just .25 of ammonia, if the water temp is 76 degrees Fahrenheit, a pH of 8.2 may cause long term harm to the fish. The link to this calculator is provided on this site.
