So your pond is around 2.5 feet deep (75 cm) the coldest you get is -2 c = 28.4 f. If your water does not freeze solid (all the water or even a solid coating of ice over the pond) the koi should be fine. I do not have koi, but have heard they are touchy about cold water, but also hear they survive in ponds over winter, if it does not freeze solid. The water plants if the are hardy, i.e. can live where it is cold, they should be fine also. If they are tropicals, they might die on you.

For the winter, shut down your pumps and stop the water circulation. Airstones should be moved to the top of the water and used primarily to keep a hole in the ice. If you only get down to -2C you shouldn't have any issues. Make sure any excess debris on the bottom of the ponds, (leaves, sticks, etc), that can decompose is removed before winter.

You want to keep the water on the bottom from being distrubed too much.

There is no reason to shut pond down, you could enjoy it all year round, you should not worry. I live in Canada and we currently have lots of snow on the ground, ice today on the pond, and my fish stay out in the -45c all year round but with a heater when the temperature drops to below minus 10 c. :)
